In the heart of Palermo, our small-batch roasting process honors both tradition and innovation. We roast every Monday and Thursday morning when the city is just waking up, using a vintage 1970s Probat drum roaster that has been carefully maintained and calibrated to perfection.
Our Method: We employ a slow-roasting technique that develops the beans' natural flavors without burning away their delicate characteristics. Each origin is roasted differently, respecting its unique profile. We monitor temperature curves precisely, listening for the first and second crack, ensuring that every batch reaches its full potential.
The result is coffee that speaks of its place of origin while carrying the warmth of Buenos Aires. Whether you prefer a light roast that highlights fruity notes or a darker roast with deep, complex flavors, each bag is roasted to order and rested for 48 hours before delivery to ensure optimal flavor development.
